Beanies Easter Recipe Challenge

I love Easter, mostly because of the chocolate eggs (they taste so much better than normal chocolate!!) but because it is a time of year when I like to get creative, making cards etc with the kids and baking scrummy Easter themed caked. This year I am joining in with the Beanies Easter recipe blogging challenge #BeaniesBakeOff.

Myself, along with nine other bloggers have been sent 3 jars of yummy Beanies coffee, something I reviewed last year. With this coffee, we were to create our own Easter recipes.


I decided one traditional recipe with a twist and one recipe that wasn't specifically for Easter but I gave it an new Easter look. With both recipes I crushed the coffee so it became more powder like before adding to the mixtures.

First up Easter nests, traditionally made with normal chocolate, I decided to mix it up with white chocolate and the caramel flavour Beanies coffee

Ingredients

* 225g White Chocolate
* 50g Butter
* 2 tbsp Honey
* 80g Shredded Wheat, broken down into small pieces.
* 2 tbsp of Beanies Caramel Coffee
* A bag of Mini Eggs

Preparation

* First melt the butter
* Then melt the white chocolate, making sure to do it slowly so that it doesn't burn.
* Mix together the white chocolate, butter, honey and coffee.
* Stir in the shredded wheat



* Share the mixture evenly between 12 cake casings.
* Place the mini eggs on top of the cakes.
* Pop in the fridge for around an hour to set.



Next up some basic muffins with an Easter twist.

Ingredients

* 1 Egg
* 120ml Semi Skimmed Milk
* 4 tbsp Vegetable Oil
* 100g Caster Sugar
* 200g Plain Flour
* 2 tsp Baking Powder
* 1/2 tsp Salt
* 1/2 a bag of Haribo Easter Jellies
* 2 tbsp Double Chocolate Beanies Coffee

Preparation

* Preheat the oven to 200 degrees.
* Beat the egg, then add the vegetable oil and milk and mix together.
* Sieve in the flour, salt and baking powder and add the sugar and coffee.
* Stir until the mixture comes together, note it shouldn't be smooth, it should be lumpy.
* Pour the haribo sweets in and give it a quick stir



* Spoon the mixture into a muffin tin/cake casings, making sure they are 2/3rds full.
* Bake for around 20 minutes, checking with a skewer to make sure they are baked to perfection.



There we have it, two recipes to tickle your taste buds. What I love about the beanies coffee is that it adds that extra flavour and you get that added coffee kick too, perfect Easter treat for the adults to enjoy.

  1. you are the first person EVER that has used shredded wheat to make your easter nests - i used to do this when i was a child but i have not seen anyone else make them this way until you! your muffins rose brilliantly - love the idea of the sweets all goeey inside x

    1. I have to admit I see lots of cornflakes or rice krispies, I think they work better with shredded wheat + they actually look like nests :) xx

I'm with Jenny - no-one ever uses Shreded Wheat nowadays, but we always used to and it definitely looks far more like actual nests - especially with the mixture you've used to bind, it sounds really tasty. The muffins look great to - I think my children would die of happiness finding Haribo inside cake! :)
