Blueberry and Nut Loaf Recipe

The colder months bring out the baker in me. I love to bake cakes, cookies etc. I'm yet to attempt a pie but I am going to rectify that this year. I think one of the best things to do is eat something you've baked straight from the oven, just something so homely about that. My latest recipe which I'm sharing with you all is a blueberry and nut loaf. Packed full of fruit and fibre it makes a brilliant breakfast or a wonderful accompniament to your afternoon cuppa.

You get a great combination of textures throughout, squished berries, crunchy nuts and a moist cake like loaf, it's a definite winter warmer!

Ingredients

* 2 cups wholemeal self raising flour
* 1/4 tsp salt
* 1 cup caster sugar
* 1 cup fresh blueberries (although frozen can be usen)
* 1/2 cup chopped walnuts
* 2 eggs beaten
* 1 cup almond milk
* 1/2 tsp almond extract
* 3 tbsp oil ( I used rice oil but alternatives such as canola can be used)

Preparation

* Preheat your oven to 180Âșc and line and grease a loaf tin.

* In a large bowl sift together the flour, salt and sugar.

* Mix in the blueberries and walnuts.

* In a separate bowl combine the eggs, milk, almond extract and oil.

* Slowly fold into the flour mixture until everything is combined.

* Pour into the loaf tin and place in the oven for around an hour. Start checking with a skewer around 45 minutes in.

This loaf combines the flavours of nuts and fruit, they are all subtly there and the almond extract gives a sweetness against the more sour tang of the blueberries.

You can of course adapt the recipe by change what type of nuts you add in and you could always use a different berry, perhaps a blackberry.

Whatever combination you decide on just know you might have trouble sharing!

  1. looks and sounds delicious, nice on it's own or with some almond milk custard.
    Would substitute the walnuts for me but maybe hazlenuts for a nice crunch
