Special K Granola Review and Giveaway

You may have gathered from some of my previous posts that I am always on the quest to get fit and be healthier and one of the things to help with this a good balanced diet. One of the things I do believe to help is always having breakfast but it is nice to change what I eat every once in a while, so when I was asked if I would like to try and review the new granola from Special K, well I couldn't resist.

I was surprosed when the package arrived because not only did I receive a pack of each flavour, I also received a lovely reusable bag and a huge tea towel!!

The granola is available in two delicious flavours : raisins and red apples and cranberries with pumpkin seeds and almonds. Both Special K granolas are packed with 5 different whole grains and are packed full of flavour.

What I loved is that each packet is resealable, making it easy to keep the granola nice and fresh. The cranberry granola was my favourite however I did enjoy both. The granola kept its crunch even when covered in milk, a big plus for me because I can't stand soggy cereal!! I really like that you can taste the individual flavours of each ingredient and it isn't too sweet either, I find some other granolas tend to have too much sugar added to them.

There was a great recipe on the tea towel that used the Special K granola as an ingredient, so I decided to give it a go.

Ingredients

* 100 ml milk
* 2 large eggs
* 4 tbsp sunflower oil
* 4 tbsp clear honey
* 1 tsp vanilla extract
* 2 apples grated
* 125g wholemeal plain flour
* 125g plain flour
* 75g special k granola
* 1 1/2 tsp baking powder
* 1 1/2 tsp bicarb
* 1 tsp ground cinnamon
* extra granola for sprinkling on top of the muffins

Preparation

* Preheat the oven to 180 degrees.
* In a jug, mix together the milk, eggs, oil, honey and vanilla extract.
* In a bowl sieve in the flours, baking powder, bicarb and cinnamon.
* Stir in the apple and granola
* Pour in the milk mixture and stir until the ingredients come together.
* Spoon the mixture into 12 muffin cases and sprinkle granola over the top of each one.
* Bake for 20-25 minutes.

I was pleased with the finished product. A delicious muffin perfect as a healthy snack or an alternative to breakfast!! The Special K granola added a lovely crunch to them.

I really enjoyed the Special K granola, I will definitely be buying more when I run out!!

  15. In winter porridge with fruit (usually slice banana). Otherwise cereal with milk, sometimes toast. I do like granola with yoghurt, and tend to prefer to have this at lunchtime. Or as an afternoon snack.
