Rainbow Pasta Salad Recipe

Ok May may have brought with it April showers but I am still hopeful that the warmer weather is on its way and of course when the sun is shining you don't want to be eating lots of hot meals, I always opt for salads but this can get boring. You may have seen my post last week all about my shopping trip to Morrisons for the Bank Holiday weekend and one of the dishes I rustled up was Rainbow Pasta Salad, take a look at my recipe below.

Ingredients

* 250g Three Colour Pasta
* Tin of Sweetcorn
* Handful of Broccoli
* 2 Tomatoes Chopped into Small Chunks
* Lemon and Herb Salad Dressing

Preparation

* Bring a pan of water to the boil and cook the pasta according to the instructions on the packet.

* Some people prefer the broccoli raw but I popped it with the pasta to cook for 5 minutes, still with a bit of crunch to it.

* Once the pasta is cooked, drain and pour into a large bowl.

* Mix in the sweetcorn, tomatoes and broccoli.

* Place in the fridge to cool for an hour.

* One cooled, drizzle over the salad dressing and mix.



A great simple meal, quick to make and the colours seem to get the kids interested but they are eating those all important vegetables too, perfect for those lighter evenings, sitting eating dinner out in the garden.
