Simple Frozen Yoghurt Recipe

I used to skip eating breakfast. Many people told me that it was the most important meal of the day but I chose to ignore this advice until this year.

Since starting on my healthy eating journey back in January, I have made a concious effort to eat breakfast every morning.

Sometimes I find myself in a rush with little time to prepare and eat anything after sorting out the kids so I've found a great way to counteract this is by preparing breakfast the night before. Overnight oats quickly became my go to breakfast but having this day in, day out started to become a little bit tiresome so I began to search for other alternatives.

Frozen yoghurt seemed like a good option. Only three ingredients needed, takes very little time to make and because you pop in the freezer, it lasts a long time. The recipe I'm sharing lasts me 5-7 days depending on how hungry I am and what fruit etc I decide to serve with it.

Ingredients

* 500g Natural Yoghurt
* 500g Condensed Milk
* Punnet of Blueberries

Preparation

* In a large bowl mix together the yoghurt and condensed milk.

* Place half the blueberries into a blender and blend down until you have what resembles a puree.

* Fold the blended blueberries into the mixture.

* Finally add your remaining blueberries.

* Pour your mixture into a large container that is suitable for the freezer. Pop it into the freezer overnight.

I suggest getting the frozen yoghurt out of the freezer 10-15 minutes before you want to eat it, giving it time to soften slightly as this makes it easier to get out of the container.

The great thing about this recipe is that you can use any fruit that you like. I also made a mango version the other day and a strawberry one is also a favourite.

The frozen yoghurt can be eaten at breakfast like I do but it also makes for a delicious yet healthy alternative to ice cream at dessert time. Perfect for those Summer months.
