Cauliflower Pizza Recipe

It's been a while since I've posted a recipe on the blog so I thought it was about time that I shared one with you. On my continual journey to lose weight and tone up I am forever trying out new things with my diet. One food that I struggle to give up is bread even though it really makes my stomach bloat. 

Something that contains this is pizza, whether frozen or made from scratch, it is a meal that is relatively quick and easy to make but as well as the bread giving that bloating affect, it is also laden with calories so I've been on the look out for a good alternative, you know fakeaway style and then I discovered cauliflower pizza bases.

I'd already been converted to cauliflower rice/couscous but I'd not thought about using it for this purpose but I am here to tell you that it really works, once made it is like eating a normal pizza except without feeling the usual guilt that comes with every mouthful you intake.

The recipe below makes a single sized pizza, perfect for one person, that's right this something you don't have to share, you can of course increase the ingredients used to make a larger sized pizza.

Ingredients 

* 350g cauliflower 
* 50g ground almonds
* 1 egg beaten
* Dried herbs of you choice
* Pizza toppings of choice

Preparation

* Preheat your oven to 200Âșc and line a baking tray with baking paper, make sure to grease it.

* If you've bought a whole cauliflower cut into chunks and blitz it in a food processor until it looks like rice. Or you can cheat like me and buy a ready made pot of cauliflower couscous.

* Place your cauliflower in a microwavable bowl, cover in clingfilm and cook in the microwave for 5-6 minutes.

* Tip onto a clean tea towel and squeeze out any excess water, make sure to wait until the cauliflower has cooled before doing this.

* Once finished pour into a clean bowl and add in the ground almonds, egg and whatever dried herb you chose, I picked oregano. Mix together.

* When all of the ingredients have come together, place your mixture onto the baking tray, mould into a flat, circular shape, making the edges slightly thicker.

* Bake for 15-20 minutes until the edges start to golden.

* Here's where you add your chosen pizza toppings. I opted for chicken, spinach and mozarella. Bake for a further 10 minutes and voila.


What you discover is that the cauliflower pizza base takes on a crumbly bread like consistency, still just as filling and definitely more flavoursome, you get a hint of almond with all of the herbs but you honestly wouldn't know you were eating cauliflower. And because of this I found it is also a great way to get your kids eating vegetables because they have no idea what the base contains (unless you tell them of course).
